Recipe:
You can use the recipe on the extract kit, or find one online that suits your tastes - let us know what kind of beers you like and we'll be able to assist with recipe and kit recommendations.

Brewing:

  1. Sanitise your equipment. This is the most important step in the brewing process. Make sure all your equipment is sanitised correctly before beginning your brew.
  2. Add 2L of boiling water (or amount specified in recipe) into your sanitised fermenter. Open your extract can or pouch and add the contents into your fermenter - if there are dry ingredients included in your kit, set them aside first.
  3. Add your fermentables (dextrose, brew enhancer, malt etc - refer to your recipe for exact ingredients and volumes). Stir until completely dissolved.
  4. Top up your fermenter with cold water until it reaches the 23L mark and stir well. This is the wort.
  5. Once the wort has cooled to 18-22°C you can now add the yeast. Stir mixture. DO NOT ADD THE YEAST IF YOUR WORT IS ABOVE 25°C.
  6. Fit an airlock and grommet to the fermenter lid and secure lid tight, making sure it is completely sealed. Half fill the U of the airlock with sanitiser or sterilized water to protect your brew.
  7. Leave to ferment for 5-7 days, or until the bubbling in the airlock ceases. You will need to check your recipe for recommended temperature. After 5-7 days you will need to check the Specific Gravity of your brew using the hydrometer. Check your recipe for SG requirements. This is when you can add your dry hops if the recipe calls for them.
  8. Once your brew has maintained the correct SG, or just under, for 48 hours you will be ready to bottle your beer.
IMPORTANT WARNING: DO NOT BOT TLE UNTIL FERMENTATION IS COMPLETE. THE ONLY WAY TO BE COMPLETELY SURE FERMENTATION HAS FINISHED IS BY SEEING THE SAME SG READING OVER A 48 HOUR PERIOD.
  9. Sterilise your bottles and siphoning/bottle filling equipment. Fill bottles, leaving 5cm from the top. Add your Carbonation drops (refer to packet or recipe for quantity) and seal.
  10. You will need to store your bottles in a warm place for at least 14 days to carbonate, before transferring them to a cool, dark location for a further 7 or more days.

Your beer is ready to drink once the liquid is clear, but for a smoother taste, leave for a further 2 weeks.

Enjoy your beer!
