Description

LalBrew® Belle Saison Dry Yeast (Danstar) is a Belgian Saison-style ale yeast, a breakthrough in the world of traditional dried yeasts. Get all the great esters and phenols that are so desirable in an authentic Belgian-style Saison, with the convenience of dried yeast! Danstar technical analysis indicates that it does not experience the sluggishness common with "Dupont"-style strains.
Full attenuation is possible within 72 hours, at a pitching rate of 1 g/L (2 packs for 19L), wort density of 12 Plato (1.048). Fermentation temperature should be kept above 17C - it is unknown at this time what the upper limit for this yeast strain is, but free-rising from pitch temperature is encouraged. The manufacturer recommends rehydrating this yeast - instructions are on the back of the package.

Attenuation: High
Flocculation: Low
Alcohol Tolerance: 15% ABV
Optimum Fermentation Temp: 15-35°C
Dosage: 50 to 100g/hl (0.5 to 1g per litre)
Please Note: For best results we Always recommend ordering an Ice Pack with your dry yeast. Ice Packs can be found below in the "Optional" section.

Direct Pitching:
Pitch the yeast directly in the fermentation vessel on the surface of the wort at or above the fermentation temperature.

Rehydrate:
Sprinkle the yeast in a minimum of 10 times its weight of sterile water (we suggest 110ml) at 30 to 35 °C. Stir gently, leave to rest for 15 minutes, then stir to suspend yeast completely. Leave it to rest for 5 minutes at 30 to 35°C, and pitch the resultant cream into the fermentation vessel.
